Today, I tried out a new recipe from one of my cookbooks and it turned out amazing. I used the recipe for Cream Cheese Brownies; and I substituted different pans... and turned out with an awesome cheesecake. Here's the recipe! The only things that are changed are the cake pan; and the time. I used a 9" circular cake pan and baked the cake at 350 for 1 hour and 20 minutes.

Tonight's post is going to be short and sweet- very sweet, in fact. Have you ever wanted to bake something, but have been out of the basic ingredients? I give you the recipe for blondies, one of my favorite things to make because it is simple and very basic- while also delicious. ENJOY!
*Pre heat oven to 350, grease an 8 inch square baking pan lined with foil *Whisk together thoroughly: 1 cup all purpose flour 1/4 teaspoon baking powder 1/8 teaspoon baking soda 1/8 teaspoon salt *In a large heavy saucepan, melt, then boil, stirring constantly until light golden brown 1/2 cup (1 stick) unsalted butter *Remove from heat and stir in until well blended 2/3 cup packed light brown sugar 1/4 cup sugar *Let cool to barely warm. Stir in well combined 1 large egg 1 large egg yolk 1 tablespoon light corn syrup 1 1/2 teaspoon vanilla *Stcrape into the pan. Bake until the top is golden brown and a toothpick inserted in the center comesout clean, 25 to 30 minutes. Cool completely in the pan on a rack. Grandma went in for another lens replacement surgery on her eye, and she won't be able to see out of that eye for roughly a week. Because of this, I am stuck with most of the chores such as laundry, bed-making, cooking, cleaning etc. Today, it begins... I have to make lunch for everyone. Not too hard of a task- especially since I like cooking. I am currently boiling water and making mac and cheese with ham for lunch.
There we go! Lunch finished. I think I did pretty good- the mac and cheese came out well, and we ate our deli ham before hand. Now, we're tucking into some brownies I made from scratch yesterday. It was my first time using the recipe, and I was quite surprised at how moist and sweet the brownies were. In fact, I'd like to share the recipe with you: You Will Need: 4 oz Baker's Unsweetened Chocolate (coarsely chopped) 3/4 cup butter 2 cups sugar 3 eggs 1 tsp vanilla 1 cup flour Prep: Heat oven to 350 degrees Fahrenheit. Line 13x9 inch pan with foil, with extra foil to extend over the edges. Spray foil with cooking spray. Microwave chocolate and butter in a large microwavable bowl on high for 2 minutes, OR until all the butter is melted. Stir until the chocolate is completely melted. Stir in sugar. Blend in eggs and vanilla. Add flour and mix well, then pour into the prepared pan. Bake for 30-35 minutes, or until toothpick comes out clean when brownies are tested. Cut, serve... and enjoy!
